Cover and cook on low setting for 7 to 8 hours or on high setting for 3 to 4 hours until pork reaches fork-tender consistency. Remove pork and shred using two forks. For enhanced texture, crisp shredded pork under broiler for 3 to 5 minutes or in hot skillet until edges develop golden color.
02 - Rinse rice thoroughly under cold running water. In saucepan, bring water and salt to rolling boil. Add rice, reduce heat to low, cover with tight-fitting lid, and simmer for 15 minutes until liquid is completely absorbed. Remove from heat and let stand 5 minutes covered. Fluff gently with fork before serving.
03 - In small mixing bowl, combine sour cream, fresh lime juice, lime zest, and salt. Whisk until smooth and fully incorporated. Transfer to refrigerator and chill until assembly time.
